Banana Pancakes

Ingredients:

  • 1/2 cup old fashioned oats

  • 1/2 cup all-purpose flour

  • 2 ripe bananas

  • 2 large eggs

  • 1/2 cup milk (dairy or non-dairy)

  • 1 teaspoon baking powder

  • 1/2 teaspoon ground cinnamon (optional)

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Oil for cooking (such as avocado or canola oil)

 

Instructions:

  1. Blend the Oats: Place the old-fashioned oats in a blender and blend until they become fine flour.

  2. Combine Dry Ingredients: In a mixing bowl, combine the oat flour, all-purpose flour, baking powder, ground cinnamon (if using), and a pinch of salt.

  3. Blend the Wet Ingredients: In the blender, add the bananas, eggs, milk, and vanilla extract. Blend until smooth.

  4. Combine Wet and Dry Ingredients: Pour the blended wet ingredients into the bowl with the dry ingredients. Stir until just combined. Let the batter sit for about 5 minutes to thicken slightly.

  5. Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and add a little oil. Pour small amounts of batter onto the skillet to form pancakes. Cook for 2-3 minutes on each side, or until golden brown and cooked through.

  6. Serve: Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or a dollop of yogurt.
