
Banana Pancakes
Ingredients:
1/2 cup old fashioned oats
1/2 cup all-purpose flour
2 ripe bananas
2 large eggs
1/2 cup milk (dairy or non-dairy)
1 teaspoon baking powder
1/2 teaspoon ground cinnamon (optional)
1 teaspoon vanilla extract
Pinch of salt
Oil for cooking (such as avocado or canola oil)
Instructions:
Blend the Oats: Place the old-fashioned oats in a blender and blend until they become fine flour.
Combine Dry Ingredients: In a mixing bowl, combine the oat flour, all-purpose flour, baking powder, ground cinnamon (if using), and a pinch of salt.
Blend the Wet Ingredients: In the blender, add the bananas, eggs, milk, and vanilla extract. Blend until smooth.
Combine Wet and Dry Ingredients: Pour the blended wet ingredients into the bowl with the dry ingredients. Stir until just combined. Let the batter sit for about 5 minutes to thicken slightly.
Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and add a little oil. Pour small amounts of batter onto the skillet to form pancakes. Cook for 2-3 minutes on each side, or until golden brown and cooked through.
Serve: Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or a dollop of yogurt.
