Ingredients

  • 1 cup shredded carrots

  • ½ cup unsweetened applesauce

  • 1 large egg

  • 1 tablespoon avocado oil

  • ⅓ cup maple syrup (or honey)

  • 2 teaspoons vanilla extract

  • ¼ teaspoon salt

  • 1½ teaspoons ground cinnamon

  • ¼ teaspoon ground ginger

  • ⅛ teaspoon ground nutmeg

  • 1 teaspoon baking powder

  • 1½ cups rolled oats

  • ½ cup whole wheat flour (or all-purpose flour)

  • ¼ cup raisins (optional)

  • ⅓ cup chopped pecans or walnuts

 

Instructions

 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone liner.

  2. In a medium bowl, mix shredded carrot, applesauce, egg, avocado oil, maple syrup, and vanilla.

  3. Add oats, flour, baking powder, salt, and spices. Stir until well combined.

  4. Fold in chopped nuts and raisins (if using).

  5. Scoop 2-tablespoon portions of dough onto the baking sheet. Flatten slightly with the back of a spoon.

  6. Bake for 15 minutes, or until edges are golden and cookies are dry to the touch.

  7. Cool for 5 minutes on the sheet, then transfer to a wire rack.

Storage

  • Store in an airtight container in the fridge for up to 4 days.

  • Freeze for longer storage — up to 3 months.
