Salmon Croquettes with Greek Yogurt-Lemon Drizzle Recipe

These salmon croquettes are a nutritious, affordable, and quick meal made with pantry-friendly canned salmon. Canned salmon is not only budget-conscious and convenient, but it’s also rich in omega-3 fatty acids, which are known for their anti-inflammatory properties. Ingredients:

  • 2 cans (14.75 oz each) of salmon, drained, skin and bones removed if desired 

  • 2 large eggs, lightly beaten 

  • 2 tablespoons plain Greek yogurt 

  • 1 tablespoon Dijon mustard 

  • 2 cloves garlic, minced (or more, to taste) 

  • 1/4 cup finely chopped green onions 

  • 1/4 cup finely chopped red bell pepper 

  • 1/4 cup chopped fresh herbs (dill, parsley, or cilantro) 

    • or 1 tablespoon dried herbs

  • 1/2 teaspoon smoked paprika (optional) 

  • Salt and black pepper, to taste 

  • 1/2 cup panko breadcrumbs (plus more for coating) 

  • Avocado oil, for pan-frying (or brushing if baking)


 

Instructions:

1. Mix the Croquettes: 

  • In a large bowl, flake the canned salmon with a fork. 

  • Add eggs, Greek yogurt, Dijon mustard, garlic, green onions, red bell pepper, herbs, paprika (if using), salt, and pepper. Mix well. 

  • Stir in 1/2 cup panko breadcrumbs. Add a little more if needed for shaping. 

2. Shape: 

  • Divide the mixture into 8 patties, about 1/2 inch thick. 

  • Lightly press into extra panko for a crispy finish. 

Yield: Makes 8 croquettes


🔥 To Pan-Fry: 

  • Heat a skillet over medium heat with a thin layer of avocado oil

  • Cook croquettes for 3–4 minutes per side, until golden brown. 

  • Transfer to a paper towel-lined plate to drain. 

🔥 To Bake: 

  • Preheat oven to 400°F (200°C)

  • Line a baking sheet with parchment paper or lightly grease it. 

  • Place croquettes on the sheet and brush or spray the tops lightly with avocado oil

  • Bake for 18–22 minutes, flipping halfway through, until golden and crisp on the edges.


 

Greek Yogurt-Lemon Drizzle Recipe (Optional)

A bright and tangy sauce to serve atop the croquettes. 


 

Ingredients:

  • 1/4 cup plain Greek yogurt 

  • 1 tablespoon fresh lemon juice 

  • 1 teaspoon lemon zest 

  • 1 tablespoon chopped fresh herbs (dill, parsley, or cilantro) 

    • or 1 teaspoon dried herbs 

  • 1/2 teaspoon olive oil 

  • Salt and black pepper, to taste


 

Instructions:

  • Mix all ingredients in a small bowl until smooth

  • Drizzle over croquettes or serve on the side
