Ingredients:
2 cups plain Greek yogurt (full-fat or 2%)
1 scoop unflavored, unsweetened protein powder (approx. 20–25g)
3–4 drops liquid stevia (or to taste)
1 tsp pure vanilla extract
½ tsp ground cinnamon
1 ripe banana, thinly sliced
½ cup strawberries (fresh or freeze-dried, sliced or crushed)
½ cup blueberries (fresh or freeze-dried)
¼ cup other fresh fruits (optional) — e.g., raspberries, kiwi, pomegranate seeds
2 tbsp mini semi-sweet chocolate chips
2 tbsp sliced almonds or granola, for extra crunch
1 tbsp hemp hearts
Instructions:
Prep Your Pan: Line a rimmed baking sheet (about 9x13”) with parchment paper.
Mix the Yogurt Base: In a bowl, combine the Greek yogurt, protein powder, stevia, vanilla, and cinnamon. Stir until smooth and creamy.
Spread the Yogurt: Spread the yogurt mixture evenly across the parchment-lined pan, about ¼ inch thick.
Add Toppings: Arrange banana slices, strawberries, blueberries, and any additional fresh fruit evenly over the yogurt. Sprinkle with chocolate chips, sliced almonds or granola, and hemp hearts. Press toppings gently into the yogurt.
Freeze: Freeze for 2–3 hours or until completely firm.
Break into Pieces: Once frozen, lift the bark out using the parchment and break or slice into pieces.
Store in Freezer: Store in an airtight container in the freezer for up to 1 month. Enjoy straight from the freezer.
This high-protein, nutrient-packed treat combines creamy yogurt with your favorite fruits, nuts, seeds, and a touch of sweetness. It’s freezer-friendly, fully customizable, and perfect for summer—or truly any time of year!
